Espiritu Salvaje (Wild Spirits)

This flight features three rich, flavorful mezcals from our friends at Gusto Historico, exemplifying the best of wild grown and harvested agaves.

  • Gusto Historico Jabali – Vasquez, 49.8% ABV

    Besides using the heart of this agave for mezcal production, in the past the fiber from agave leaves was extracted and used to make rope. Maguey Jabalí, a species endemic to Oaxaca, is very difficult to produce mezcal with due its high saponin content, it creates a foam which can easily overflow the still during production.

    Tío Juan Vázquez gives us a production of traditional mezcal made from Jabalí that is the result of the biocultural relationship established and developed over time between a plant and a community.

  • Gusto Histórico Bicuixe - Victor Ramos, 47.8%

    Gusto Histórico Bicuixe, crafted by the renowned Tio Victor Ramos, is not just a spirit, it's a testament to cultural heritage. Sourced from the scarce Agave karwinskii, exclusive to the Sierra Sur of Miahuatlán, this mezcal speaks volumes of its origin. Each bottle is a rare gem, offering a taste of the rich biodiversity and cultural traditions of Miahuatlán. It's more than a drink; it's a tribute to a land and its people.

    An aromatic masterpiece. Imagine the earthiness of tobacco leaves mingling with the rustic scent of crushed peanut shells. On the palate, it's a dance of complex flavors: the richness of wet clay, the sweetness of salted caramel, the uniqueness of lentils, and the freshness of sage, all punctuated with subtle red berry undertones. Each sip is an exploration of these intricate flavors, offering a sensory experience like no other.

  • Gusto Histórico, Puntas Espadin de Milpa y Bicuixe con Naranja, 67.8% ABV

    This extremely small batch puntas mezcal is made in collaboration with, and exclusively for, us here at El Naranjo!

    Fashioned after a wedding style pechuga, this joven mezcal is produced with espadin grown alongside edible crops and wild harvested bicuixe. It is then double distilled with orange added to the copper alambique during the second distillation to add gorgeous notes of vanilla and gentle orange.

Los Primos (The Cousins)

This unique flight spotlights agave distillates that aren’t mezcal or tequila. Some because of their plant, some because of their process, some on just a technicality. This flight is an excellent way to experience a lesser known side of the agave distillate family.

  • Caballito Cerrero, Chato Blanco 46% ABV

    Hailing from Jalisco, and processed as one would handle Silver Tequila, this destilado de agave is made from the exceptionally rare Chato agave.

    Gorgeous green, grassy aroma with a subtle minerality this spirit features a body of cinnamon, black pepper and rich smoke.

  • Chacolo, Brocha Capon 3 Anos, 48% ABV

    Chacolo Brocha is made with maguey Brocha (agave Angustifolia), a varietal related to Espadin. This agave takes approximately 7 years to mature with an additional 3 years capon. The agave are cooked in an underground oven and milled by hand with axes. Once cooked and milled, the agave are fermented naturally in wooden tinas with mountain spring water. Finally, they are double distilled in a Filipino style still.

    Herbal notes such as spearmint dance with chocolate, raw sugar and a hint of pine. Finishes dry with a touch of smoke.

  • Gusto Historico, Cucharillo, Emanuel Ramos 48.5% ABV

    Gusto Histórico specializes in bringing unique destilados de agave y mezcales tradicionales to the market. The brand was started by one of the co-founders of famed Oaxacan mezcaleria Mezcaloteca, and the Gusto Histórico brand features many of the same producers, with a focus on preserving traditional production methods and practices.

    Distilled from the cousin to the more famous agave, this spirit uses the Oaxaca native dasylirion serratifolium to produce a rich sotol experience.

    A soft grassy, herbaceous body with a hint of pineapple, almost creamy, with a smooth semi-dry finish
